Black Bean Cakes

It’s a meatless night! What will you be cooking? We’re making our Black Bean Cakes.  Black beans are jam-packed full of nutrition and are so delicious. When we’re in a hurry, we just open a can of beans, rinse and drain them and then season them with cumin and chili powder before heating them up. That all by itself or wrapped in a corn tortilla with some smashed avocado is one of the quickest and tastiest meals we know.

Black beans are high in soluble fiber, the kind that helps to lower LDL (“bad” cholesterol), will help stabilize blood sugar levels, and make you feel full for hours. Even though beans have a reputation for causing gas, they actually help move things through your digestive system quickly, preventing constipation. Most importantly, beans are so great because they’re a source of good carbs as well as lean protein and full of disease-fighting antioxidants – everything you need in one meal!

Black Bean Cakes with Green Onion Cream and Avocado Salsa

Yield: 4 Servings

Ingredients

  • Cakes:
  • ½ cup bottled salsa
  • 2 tsp. ground cumin
  • 2 (19 oz.) cans seasoned black beans (rinsed and drained)
  • 1/2 cup crushed non-GMO tortilla chips
  • ¼ cup thinly sliced green onions
  • 1/4 cup chopped cilantro (optional)
  • Cooking spray
  • Toppings:
  • ½ cup nonfat plain Greek yogurt
  • ¼ cup thinly sliced green onions
  • ¼ cup diced peeled avocado
  • ¼ cup diced sweet white onion
  • 1 Roma tomato, seeded and chopped
  • 2 tbs. chipped cilantro (optional)
  • 1 tsp. fresh lime juice

Instructions

  1. Preheat oven to 375ºF.
  2. To prepare cakes, combine first 3 ingredients in a food processor; process until smooth. Stir in crushed tortilla chips, ¼ cup green onions, and cilantro.
  3. Divide mixture into 24 equal portions; shaping each into a ½-inch-thick patty. Place patties on a baking sheet coated with cooking spray. Bake at 375ºF for 14 minutes, turning after 7 minutes.
  4. To prepare toppings, combine yogurt and ¼ cup green onions in a small bowl. Combine avocado, tomato, onion, cilantro, and lime juice in a small bowl. Top each patty with 1 tsp. green onion cream and 1 tsp. avocado salsa.
